Allow for 10 minutes cooling and 4 hours chilling.
500g mixed frozen berries
375ml (1½ cups) 100% apple juice
1 cinnamon stick, broken in half
80ml (1⁄3 cup) boiling water
1 Tbsp gelatine powder
Put berries, apple juice and cinnamon in a medium saucepan. Bring mixture to a gentle simmer over a medium heat. Cook for 5 minutes or until berries soften. Remove and discard cinnamon stick.
Meanwhile, put boiling water in a small heatproof bowl. Sprinkle over gelatine. Stir until gelatine has almost dissolved. Add to berry mixture and stir until gelatine is fully dissolved. Pour into a heatproof jug and set aside for 10 minutes to cool slightly.
Pour berry mixture into 6 small shallow dishes. Refrigerate for 4 hours or until set. Serve.
